I have kind of a counter-take. VCs, especially good ones, rarely interfere with the things you listed, so I don't think freedom is what really moves the needle.
I think you should get to VCs when your business is clearly bottlenecked in a way that only money can solve.
Think low margins, for which you need high volume (e.g. Airbnb), or capital intensive stuff (e.g. Uber), or not going fast being an existential risk (e.g. OpenAI).
So, if you *can* grow slow and steady (many businesses literally can't without a ton of money upfront), it's almost always the right call to go independent — and if you change your mind can always raise money later, often on better terms.
